Fuss free dinners
Sometimes, you want to make something homemade, satisfying and healthy but uncomplicated. That’s when one pot dinners really come into their own!
I’ve just revisited an old favourite recipe that you can pretty much throw into the pan and leave to its own devices, and it’s ready within an hour!
Herby Mediterranean Chicken
Preparation time: 10 minutes
Cooking time: 3-40 minutes
2-4 organic, free range chicken breasts
One 500g tin of chopped tomatoes
500 fresh, chopped tomatoes
10 olives (optional)
One red onion
2 cloves garlic
2 bay leaves
One small glass white wine
One tablespoon olive oil
Teaspoon dried Thyme
Teaspoon dried Oregano
Teaspoon of tomato puree
Teaspoon white wine vinegar/balsamic vinegar
A few drops of Worcestershire sauce
Salt and Pepper to taste
Heat the oil in a frying pan or shallow casserole.
Add the onions and garlic
Season the chicken breasts and sear them on both sides
Add the glass of wine and bubble for a few minutes
Add the chopped and fresh tomatoes
Add a teaspoon of white wine/balsamic vinegar
Add the tomato puree
Add the drops of Worcestershire sauce, olives (if using) and all the herbs
Bring to the boil, then simmer for 30-40 minutes
And there you have it – so simple! Serve with whatever you like – brown rice, pasta, potatoes, bread (to soak up the sauce, Mediterranean style!), or with a healthy green salad.
Goes very well with a nice, light Italian white wine, Prosecco or a fruity red wine.
